** Purple Sweet Potato Cheesecake **

PURPLE Cheesecake!!!
Have you ever seen anything this tempting?
Me either!

In the spring I saw a photo of a purple sweet potato cheesecake.  I immediately knew that I HAD to make one.  The only problem was it called for PURPLE sweet potatoes in the recipe.  Hmm....  Could be a problem.  

But, I really wanted to make one and so I got right on Google and researched purple sweet potatoes.  When I learned the particular kind I needed I found a place that I could actually order the seeds through the mail!  

So I did.

And I planted them.

And they grew.

And Dave watered them, weeded them, and dug them up.

And, as they say...the rest is history!

 I know... I wouldn't have believed it either.  Just goes to show you should never underestimate what a little plastic surgery can do! Or a little plastic potato peeler!

After peeling them, they started to look like they had spent a few minutes primping in front of the mirror. 

 They were actually very pretty when I got skin deep!
 

Hmm... they mysteriously resemble the purple chips that my niece Natalie brought back from France for me this summer.
 

 
Yes, I do believe these chips are made from purple sweet potatoes!  Or, I guess they could be from regular purple potatoes.  We have planted them once too.  We have also planted purple carrots, purple beans, and we even picked a peck of purple peppers we planted previously.  Either way, these chips are addicting!  I wonder if it has anything to do with the color or if I'd like them just as much if they were a different color?  Dumb question!

It was probably blue sad that it's job was done and now it was being dumped right down the drain.  I wonder if I could have found a use for blue water?  
To answer your question...yes, it did stain my white sink.  But I was totally fine with that. I would've been more fine with it if it had been more purple and less blue.

I am not into violence, but these babies needed a good beating!

This crust may be the best part of the entire cheesecake!  It has macadamia nuts in it and the most incredible flavor! Just the smell of it baking was enough to transport me back to Hawaii for a few moments.  Mmm...


Finally in the oven getting some heat.


Meanwhile back at the ranch stove... I am cooking the Haupia.  Haupia is really just coconut pudding that sets up after chilling.

Here's the recipe for those of you adventurous enough to try it! And if you're not, then just take a vacay to the Hilo Hawaiian Hotel where it is served!
  
Purple Sweet Potato Cheesecake

Makes One 9-inch Cheesecake
Ingredients: 
    Crust:
    ¾ cup macadamia nuts, finely chopped
    ¾ cup graham cracker crumbs
    ½ cup melted butter

    Cheesecake:
    1½ cups steamed and mashed
            Okinawa purple sweet potatoes  
            (takes approximately 2 potatoes)
    1 pound cream cheese
            (two-8 ounce packages)
    3 large eggs
    ¾ cup sugar
    1 teaspoon vanilla extract
Haupia:

2 cups coconut milk
1 cup sugar
2 cups water
½ cup cornstarch

Directions:

To prepare the crust:  Preheat oven to 350°F. Mix all ingredients. Pat the crust into a 9-inch spring form pan. Bake for 10 minutes in 350°F oven. Remove the pan from the oven, but leave the oven on.

To prepare the cheesecake:  Put the mashed sweet potato, cream cheese, eggs, sugar, and vanilla in a mixer bowl and beat until well blended. Pour the cheesecake batter over the crust in the spring form pan. Bake for 1 hour in the 350°F oven. Cool completely.

To prepare the haupia:  Mix together the coconut milk, sugar, water, and cornstarch in a heavy saucepan. Cook over low heat, stirring constantly, until the haupia thickens.

To assemble:  Spread the warm haupia evenly over the top of the cheesecake.

My Dream House!

Look! 

Taylor found my dream house in Brazil!! 

Oh my!  I have never seen a house quite this PURPLE in all my days!  And I'm so happy he is in the photo looking so cute as a missionary for our church!


When we traveled to Puerto Rico a few years ago, we saw a few houses that were purple.  They really like to color things up over there, just as they do in Brazil.  The USA needs to catch on! Of course, I had to take photos of any building I saw that was purple. Here are few:

Not only a purple house, BUT also a street lined with PURPLE cobblestones!   They were amazing!

Like this PURPLE Gingerbread house!  I think I could be happy living here!
 It even has a rocking chair on the porch!  What more do you need?

This is a beach house in Maryland and available to rent.  It's only about $3000 buckaroos a week.  But hey, if I start saving now, maybe in 10 years I can afford to rent it!  I think I'll put this on my bucket list!



But... if I can't save enough, then maybe this would be a nice replacement!

I can see I totally got gyped as a child! Maybe I can talk Dave into building one of these for future grand-kiddos!  Or for a future grandma???  =)  I'll just replace those lawn chairs on the porch with a rocking chair or two....

Well, That's a First!


I went to lunch the other day with some mom's of Taylor's friends.  All our boys played on the high school basketball team together since they were freshman.  They actually started playing basketball together many years before that when they were on comp teams together.   It was pretty cool that they all went on to make the team all four years of high school.  It's even cooler that they are all out in the world serving two year missions for our church.

We wanted to get together and check up on all the boys and hear how they are doing.   

We decided to go to Idle Isle.
Good choice.  They had the turkey special that day.


Mmmm........

There are not many things that I like better than a turkey dinner!  Everyone else agreed and we all ordered the special!  YUM!
 
The waiter wasn't too good at taking photos with a smart phone.  He cut Sarah off in this one....↑
And this one is too blurry.

But that is not where his mistakes ended...
We asked for separate checks and when I opened mine I saw this ↓
SENIOR DISCOUNT?  What the??
A buck off?  Hey, if I am going to be insulted I think I should at least get 50% off!

Everyone else looked at their checks and sure enough we ALL got the discount!  Of course, we had to all get out our granny glasses and turn on our portable oxygen machines before we could be for certain.

After a good laugh, Sarah tapped her cane on the waiter's knee and asked him, "Sonny boy, how old do you have to be to get the senior discount?"  He said, "I am not sure, but I think it's 50."  

Well then.

I don't care if I am 50 (or a little more) I do NOT want a senior discount!  I would rather pay the extra buck than be considered a senior!  Aaaa!

Sarah tried to make me feel better by saying that she is a senior and she was sure he just didn't want to have to ask and embarrass anyone and so he just gave it to us all.  Fine, but STILL!  Miriam was not too happy because she is only 47.

The turkey special wasn't the only turkey at Idle Isle that day!

Okay, so maybe he was just trying to be nice and not hurt anyone's feelings.  But he didn't consider that if he gave it to everyone then he might insult some of us.  Or... that those that might be insulted are good at turkey hunting!  And since the season IS coming up...
He better be on the lookout!

I had a hard time finding photos where all four boys are together in the same photo.  This one is after a game win and the student body just sang the school song. Our boys are the first four in white jerseys starting from the left.  Trevor #32 - Josh #24 - Stephen #33 - Taylor #2 They are all holding basketballs but Taylor.  He is holding a purple warm up shirt.

This one is after Taylor's buzzer beater shot.  It was such a great ending to an intense game!  You can read about that HERE.  They are the first three white jerseys from the left.  Taylor is barely visible with someone's arm around his neck.  He kind of got mauled that night.  


Here are some action shots.  I only have three of them in the same shot at a time. Taylor is usually the one with the ball because... well, I am his Mom and I was taking photos of him.

 That was a fun flashback for me!
I learned they are all doing great on their missions and enjoying their time serving.
Taylor, Josh, and Stephen all left on the same day. (November 6, 2012). Trevor left a few months later.
Taylor is serving in Brazil.
Josh is serving in California.
Stephen is serving in Columbia.
Trevor is serving in New York.


Since this little "episode" I have decided I better get serious about that Mustang!  Yep...  I think it's time this "senior" gets herself a sports car to prove she is still a whippersnapper!
